Mashed Potatoes with Blue Cheese
Makes 4 servings
*2 lbs. red potatoes, cut into 2 inch chunks
*1 clove garlic, peeled
*4 oz. blue cheese, crumbled
*1/2 cup half 'n half
*2 tbls. fresh parsley, chopped
*2 tbls. butter
*Salt and freshly ground black pepper
1Place potatoes and garlic in a large saucepan and cover with water. Bring to boil and cook until tender, about 15 minutes. Drain and add back into saucepan.
2Add blue cheese and half 'n half and mash to desired consistency. Add parsley, butter and salt and pepper to taste. Combine to mix.
