Fresh Pasta Dough
Makes 1 lb.
*2 cups all-purpose flour, plus extra for dusting
*A pinch of salt
*3 medium eggs
1Put flour and salt in the bowl of a food processor and add eggs. Pulse in short bursts until the mixture forms sticky crumbs.
2(If making dough by hand, sift flour into a large bowl, add salt and make a well in the center. Add eggs to the well and gradually work the flour into the eggs.)
3Lightly flour a clean surface, transfer the mixture to the surface and combine mixture to form a soft dough. Knead the dough for about 5 minutes until it is smooth, wrap in plastic wrap and chill between 30-50 minutes.
4Divide the pasta into 4 pieces and roll through a pasta machine to desired thickness. Dust with flour as necessary. Alternatively, use a rolling pin to flatten to desired thinness.
