Cold Sesame Noodles
Makes 6-8 servings
*1 pound Chinese-style noodles or thin spaghetti
*1 1/2 teaspoons dark sesame oil
*3 tablespoons peanut oil
*1/2 cup chunky peanut butter
*1 bunch scallions, chopped, divided
*2 tablespoons soy sauce or tamari
*1 tablespoon vinegar
*1 teaspoon sugar
*1/2 teaspoon crushed red pepper flakes or to taste
*Diced red pepper for garnish
*Sesame seeds for garnish
1Cook noodles according to package directions until tender but firm. Drain and rinse with cold water. Drain again thoroughly. Combine the noodles and sesame oil and toss to coat well. Cover tightly with plastic wrap and refrigerate to chill.
2Heat peanut oil in saucepan. Add peanut butter, half of the chopped scallions, soy sauce, vinegar, sugar and red pepper flakes and mix well. Heat through adding a little water if a thinner consistency is desired. Cool.
3When ready to serve, toss noodles with peanut sauce to coat completely. Garnish with diced red pepper and remaining chopped scallions. Sprinkle with sesame seeds and serve cold.
