Smoked Tomatoes
*12 vine-ripened red tomatoes, halved crosswise
*Olive oil for drizzling
*Kosher salt and fresh ground pepper to taste
1Drizzle the tomatoes with olive oil and sprinkle with salt and pepper. Prepare a stovetop smoker according to the manufacturer's instructions. Smoke the tomatoes for 20 to 30 minutes. They will keep, covered, in the refrigerator for up to 5 days.
Chef's Tips
  • These smoky tomatoes give a depth of flavor to all kinds of vinaigrettes, sauces, salsas and soups.
  • If you have a stovetop smoker, it's a quick 20-30 minute technique.Otherwise, have some tomatoes ready to put on the outdoor smoker or grill after you've finished cooking another dish.
