Caramelized Salsify
*Juice of 1 lemon
*1 lb. salsify or burdock root
*2 tbls. olive oil
*2 tbls. sugar
*2 tbls. water
*Kosher salt and freshly ground pepper to taste
1Add the lemon juice to a bowl of water. Peel the salsify or burdock root and cut into ½-inch long diagonal pieces, immersing it in the lemon water as you go. Use immediately or keep in the lemon water up to 24 hours ahead. Drain.
2Heat a large saute pan or skillet over high heat and add the olive oil. Add the salsify or burdock, sprinkle with the sugar and cook, stirring, until beginning to brown, about 3 to 4 minutes. Stir in the water. Reduce heat to low and cook until just tender, 3 to 4 minutes. Season with salt and pepper and set aside.
