Layered Bean Dip
Makes 6-8 servings
*16-oz. can refried beans
*15-oz. can black beans
*1/2 cup sour cream
*6 oz. shredded cheddar cheese or cheddar and mozzarella mix
*4-5 scallions, chopped
*Tortilla chips
1Preheat oven to 375 degrees. Spray a 9-inch round baking dish with non-stick spray.
2Combine beans and spread on bottom of baking dish. Top with sour cream and then top with cheese. Cover and bake for 20 minutes. Uncover and cook an additional 10 minutes until bubbly. Garnish with chopped scallions. Serve with tortilla chips.
  • Add jalapenos or chopped green chiles to taste for a spicier version.
