Stuffed Cherry Tomatoes
Makes approx 20 appetizers
Ingredients
*1 pint cherry tomatoes
*4 hard cooked eggs, finely chopped or put through a ricer
*1/2 cup mayonnaise
*1/2 tsp. Dijon mustard
*1/4 tsp. fresh chives, chopped
*Salt and freshly-ground pepper to taste
Instructions
1Cut a slice off the top of each tomato. Scoop out pulp from inside carefully to form a shell. Turn tomatoes upside down on a paper towel to drain.
2Combine eggs, mayonnaise, mustard and chives. Season with salt and pepper. Mix well. Refrigerate until well chilled.
3Using a pastry bag, pipe egg filling into tomato shells.
