Tomato & Basil Bruschetta
Makes 6 servings
*6 plum tomatoes, cored and seeded
*4 tbls. red onion, finely minced
*2 tbls. basil, minced
*1 tbls. + 1/4 cup extra virgin olive oil
*Salt and freshly-ground pepper to taste
*1 loaf French bread
*2 cloves garlic, minced
1Dice tomatoes. Place in a medium-sized glass bowl. Add red onion and basil. Mix in 1 tablespoon extra virgin olive oil. Season to taste with salt and pepper. Cover with plastic wrap and let stand at room temperature at least 2 hours to allow the flavors to combine.
2When ready to serve, preheat oven to 350 degrees. Slice French bread, making diagonal cuts.
3Separately, mix ¼ cup extra virgin olive oil with minced garlic. Brush garlic oil onto bread slices. Place on non-stick baking sheet and toast garlic bread in oven until lightly browned, about 5 minutes.
4With a slotted spoon, transfer tomato mixture into a serving dish. Spoon tomato mixture on top of garlic bread slices.
