
Tomato & Basil Bruschetta
Makes 6 servingsIngredients
* | 6 plum tomatoes, cored and seeded |
* | 4 tbls. red onion, finely minced |
* | 2 tbls. basil, minced |
* | 1 tbls. + 1/4 cup extra virgin olive oil |
* | Salt and freshly-ground pepper to taste |
* | 1 loaf French bread |
* | 2 cloves garlic, minced |
Instructions
1 | Dice tomatoes. Place in a medium-sized glass bowl. Add red onion and basil. Mix in 1 tablespoon extra virgin olive oil. Season to taste with salt and pepper. Cover with plastic wrap and let stand at room temperature at least 2 hours to allow the flavors to combine. |
2 | When ready to serve, preheat oven to 350 degrees. Slice French bread, making diagonal cuts. |
3 | Separately, mix ¼ cup extra virgin olive oil with minced garlic. Brush garlic oil onto bread slices. Place on non-stick baking sheet and toast garlic bread in oven until lightly browned, about 5 minutes. |
4 | With a slotted spoon, transfer tomato mixture into a serving dish. Spoon tomato mixture on top of garlic bread slices. |
