Scallion-Mashed Potatoes
Makes 4 servings
*3 lbs. Idaho baking potatoes, peeled and cut into halves or chunks
*1 tsp. garlic salt
*2 tbls. butter
*1 bunch scallions, chopped (white and light green parts only)
*3/4 - 1 cup milk
1Place potatoes in large saucepan and cover with water. Add garlic salt to water and bring to boil. Reduce to med-high heat, cover and cook until potatoes are fork tender, about 35-40 minutes.
2When potatoes are almost done, melt butter in small saucepan over low heat, add scallions and cook until tender (do not burn butter).
3When potatoes are done, drain, add milk and mash until smooth and fluffy.
4Add butter/scallion mixture and mix into potatoes. Salt and pepper to taste.
5NOTE: Use electric hand beater for smooth consistency when mashing potatoes.
