Dilled Pasta and Salmon Salad
Makes 6 servings
*12 oz. penne pasta
*4 tbls. extra virgin olive oil
*1 lb. salmon fillet, skinned
*1/3 cup plain yogurt
*4 tbls. fresh lime juice
*1 large cucumber, halved lengthwise, seeded and sliced crosswise
*4 tbls. fresh dill, finely chopped
*Salt and pepper to taste
1Cook penne pasta in boiling salted water according to package directions. Drain and toss with 1 tablespoon of olive oil. Cover and chill completely.
2Brush salmon with 1 tablespoon olive oil. Grill or broil fish, turning occasionally, until cooked throughout. When fish is cooled, cut into 1-inch cubes.
3In a large bowl, whisk yogurt, remaining 2 tablespoons olive oil and lime juice to combine. Add penne, salmon, cucumber and 3 tablespoons chopped dill. Season with salt and pepper. Toss to mix well.
4To serve, divide among 6 dinner plates. Garnish with remaining dill. Serve at room temperature.
