Ranch Chicken and Potato Salad
Makes 4 servings
*1 lb. medium red (new) potatoes, cut into cubes
*1/2 lb. fresh green beans, trimmed, cut into 1-inch pieces
*1/2 cup mayonnaise
*1/3 cup ranch salad dressing
*1 tbls. prepared horseradish
*Salt and pepper to taste
*2 cups cooked chicken, cubed (See Notes)
*2 stalks celery, thinly sliced
*1 bunch scallions, chopped
*Salad greens, torn into bite-sized pieces
1Cook potatoes in a large pot of salted water for 8-10 minutes. Add green beans and cook an additional 5-8 minutes until potatoes are cooked and beans are crisp-tender.
2In a small bowl, combine mayonnaise, ranch dressing and horseradish. Season with salt and pepper and blend well.
3Drain potatoes and green beans. Rinse with cold water and drain well. Place in a large serving bowl and add chicken, celery and scallions. Pour dressing over salad and toss to coat.
4Arrange salad greens on 4 dinner plates. Top with salad. Reseason if desired.
