Shrimp and Spinach Salad
Makes 4 servings
*11-oz. can mandarin oranges
*1/2 cup sour cream
*1/4 cup honey mustard
*6 cups fresh spinach, torn into bite-sized pieces
*1 lb. large fresh shrimp, cooked, peeled and deveined
*6 scallions, chopped, white and light green parts only
*Pine nuts, toasted, for garnish
1Drain mandarin oranges, reserving 2 tablespoons of liquid. Cover and refrigerate oranges.
2In a small bowl, combine sour cream, honey mustard and orange liquid. Cover and refrigerate.
3To serve, arrange spinach on 4 dinner plates. Top with shrimp, mandarin oranges and scallions. Drizzle each salad wtih dressing. Sprinkle toasted pine nuts to garnish.
