* | 4 swordfish steaks |
* | 2 tbls. olive oil |
* | Salt and pepper to taste |
* | 3 plum tomatoes, chopped |
* | 1 red onion, chopped |
* | 8 oz. gorgonzola cheese, crumbled |
1 | Brush swordfish steaks with oil, season with salt and pepper and grill on both sides, 7-10 minutes. Transfer to baking pan. Add tomatoes and onion next to the fish and cover with cheese. Bake at 400 degrees until fish flakes easily and cheese is melted, about 10 minutes. |
2 | Place fish on platter and serve with vegetables and cheese on top. |
