*Butter for greasing molds
*3 eggs
*1/4 cup superfine sugar
*1/2 tsp. water
*4 tbls. butter, softened
*1/2 cup flour
*Confectioner's sugar for dusting
1Preheat oven to 375 degrees. Butter madeleine molds.
2Combine eggs and sugar and beat until the mixture is a pale color. Stir in water and butter. Sift in flour and fold gently to mix.
3Divide the batter among the molds, filling them ¾ full. Bake 15 minutes or until madeleines have risen and are lightly browned. Turn out and cool on a rack. Dust liberally with Confectioner's sugar.
