Lemon Fluff
Makes 4-6 servings
*2 cups fresh ricotta cheese
*1 1/3 cups sugar
*1/3 cup dark rum
*2 tbls. finely grated lemon zest
*2 tbls. lemon juice
*Pint fresh raspberries or blueberries
*Fresh mint for garnish
1Combine cheese, sugar, rum, lemon zest and lemon juice in a large mixing bowl. Beat with an electric mixer until fluffy and well blended. Spoon into ramekins or custard cups. Cover and refrigerate 24 hours.
2When ready to serve, garnish with fresh berries and mint.
