Raspberry Sabayon
Makes 6 servings
*3 egg yolks
*1/3 cup sugar
*3/4 cup fruity white wine
*1/2 cup whipping cream
*Pint of fresh raspberries or strawberries
1Beat egg yolks and sugar together in the top part of a double boiler or bowl over simmering water until mixture forms ribbons.
2Whisk in wine. Beat until mixture is nearly tripled in volume. Remove from heat and cool slightly.
3Whip cream until soft peaks form. Fold into sauce. Chill until ready to serve.
4Divide raspberries or strawberries among 6 balloon glasses or stemmed dessert glasses. Top with sabayon sauce.
