Cappuccino Mousse
Makes 4 servings
*6 oz. semi-sweet chocolate chips
*1/3 cup strong coffee or brewed espresso
*2 tbls. dark rum
*2 eggs, room temperature
*1 cup heavy or whipping cream
*Cinnamon for garnish
1In the top of a double boiler or in a stainless steel bowl over simmering water, melt chocolate chips in the coffee. Remove from heat and add rum. Pour mixture into blender or food processor and add eggs. Blend well.
2Separately, whip cream until it forms soft peaks. Remove a few tablespoons and reserve for garnish. Fold chocolate mixture into remaining whipped cream. Spoon into stemmed goblets or dessert cups and chill at least 4 hours.
3To serve, top with reserved whipped cream and sprinkle with cinnamon.
