Special Occasion Rum Cake
*10 oz. package yellow cake mix with pudding
*4 large eggs
*3/4 cup cold water
*1/2 cup vegetable oil
*1 cup dark rum
*1/4 cup butter, softened
*1 cup granulated sugar
*Decorator sugars for garnish (see note)
1Preheat oven to 325 degrees. Spray Bundt pan with non-stick oil spray. In a large bowl, combine cake mix, eggs, ½ cup water, oil and ½ cup rum. Pour cake batter into pan and bake one hour. Invert onto serving platter.
2To prepare glaze, melt butter in a small saucepan and add remaining ¼ cup water and sugar. Bring to boil and reduce heat to a slow boil, about 5 minutes. Remove from heat and add remaining ½ cup rum.
3Poke holes in top of cake with a toothpick. Pour glaze over holes. (Use a turkey baster to add excess glaze on top). Cover top with colored sprinkles.
  • Use a variety of decorator sugar colors for a change of season flair: red for Valentine's Day, green for St. Patrick's Day, yellow and purple for Easter, orange for Halloween, red and green mix for Christmas, pink or blue for Adult Birthdays.
