Amy B's Pasta Primavera
Makes 6 servings
*2 tbls. salt, plus additional to taste
*1 lb. fettuccini
*1/2 cup olive oil
*1/2 cup red onion, finely chopped
*3/4 lb. snow peas
*3/4 lb. sliced prosciutto, julienned
*1 pint grape or cherry tomatoes
*2 red or orange peppers, cored and cut into a fine julienne
*8 scallions, cut diagonally into 1/2 inch pieces
*1 bunch chives, chopped
*Freshly ground black pepper to taste
*8-10 tbls. raspberry vinegar
*1 cup Asiago cheese, grated
1Bring a large pot of water to a rapid boil. Add 2 tbls. salt and cook fettuccini until tender, yet still firm. Drain. Transfer to large mixing bowl, add olive oil and red onion; toss to combine. Cool to room temperature.
2Blanch snow peas in boiling water for about 1 minute and plunge peas immediately into ice water. Drain and pat dry.
3Add peas, proscuitto, tomatoes, peppers, scallions and chives to pasta. Season with salt and pepper, to taste. Sprinkle with raspberry vinegar, to taste, and toss gently.
4Add Asiago cheese and toss again. Garnish with additional chopped chives, if desired. Serve at room temperature.
