Rhubarb Crumble with English Custard Sauce
Makes 6 servings
*1 cup flour
*1/2 cup dark brown sugar
*6 tbls. butter, cut into small pieces
*1 1/2 - 2 lbs. rhubarb, washed and cut into 1-inch cubes
*2 tbls. fresh lemon juice
*1/2 cup sugar
*1/2 tsp. cinnamon
*1 envelope Birds® imported English Dessert mix, prepared according to package directions
1Preheat oven to 300 degrees
2Mix flour and brown sugar in a mixing bowl. Add butter and mix together with your fingers until mixture resembles coarse breadcrumbs.
3Put rhubarb in a 10 inch pie plate or souffle dish. Sprinkle with lemon juice, sugar and cinnamon. Add the crumble mixture on top, pressing it down gently, to cover all the rhubarb.
4Bake 20 minutes or until crumble is golden and rhubarb is bubbling at the edges. Serve with warm English Custard Sauce or whipped cream.
