Rosemary Lamb Chops and Mushroom Packets
Makes 6 servings
*1 large clove garlic, minced
*4 tbls. fresh rosemary, chopped
*2 small shallots, finely diced
*4 tbls. sweet butter, softened
*12 loin lamb chops, 1 1/2 inches thick
*6 thin lemon slices
*1 lb. crimini mushrooms
*Salt and freshly ground pepper
1Preheat oven to 350 degrees.
2Mash garlic, rosemary, shallot and butter together to form a paste. Spread over lamb chops.
3For 6 packets, arrange 2 lamb chops each on a piece of aluminum foil. Top with a slice of lemon. Arrange mushrooms evenly around the chops. Season to taste with salt and pepper. Seal the foil to make packets and set on a baking sheet.
4Bake for 20 minutes (for medium rare) to 45 minutes (for medium well), according to taste. Transfer packets to serving plates to open. Discard foil.
