Creamy Scrambled Eggs
Makes 4+ servings
*6 oz. cream cheese, softened
*6 tbls. light cream or half 'n half
*6 eggs, lightly beaten
*Salt and freshly ground pepper
*2 tbls. butter
*Fresh chives, chopped
1Combine cream cheese and cream in a small mixing bowl. Add eggs, beating until blended. Season with salt and pepper to taste.
2In a medium skillet, melt butter over medium heat. Pour egg mixture into skillet. Cook, stirring frequently, over medium heat until eggs are cooked as desired. Sprinkle with chopped chives and serve immediately.
