Blinis with Caviar
Makes 2-4 servings
*1 3/4 cup all-purpose flour, sifted
*1/4 tsp. salt
*3 eggs
*1 3/4 cups 2% milk
*1/4 cup (1/2 stick) butter
*1-2 oz. beluga, ossetra or sevruga caviar
*3 slices red onion, finely minced
*1 hard-cooked egg, finely chopped
*Sour cream
1Combine flour, salt, eggs and milk in a blender or food processor. Process until smooth, 1-2 minutes. Strain batter into a pitcher and let stand 30 minutes.
2Melt half the butter in a large nonstick skillet. Pour batter to make 4 blinis (small pancakes). Cook over medium heat about 8-10 minutes each side until golden. Transfer to wire rack and cover to keep warm. Repeat to make 4 more blinis.
3Serve warm with caviar. Accompany with red onion, chopped egg and sour cream.
  • Caviar is best served in a glass dish placed in crushed ice. Use a bone, mother-of-pearl or even plastic spoon to scoop up every egg - never use stainless steel or silver which will alter the flavor.
