Chicken Salad
Makes 6 servings
*3 cups cooked chicken
*1 cup chopped celery
*1 bunch chopped scallions (white and light green parts only)
*1 cup mayonnaise or to taste
*1 tbls. lemon juice
*Salt and pepper, to taste
*Lettuce leaves
1Shred or dice cooked chicken into bite-sized pieces
2Add celery, scallions, mayonnaise and lemon juice. Mix together. Salt & pepper to taste.
3Chill and serve on cold, crisp lettuce leaves.
  • Dress up this basic chicken salad recipe by adding your choice of chopped apples, raisins, grapes, nuts, etc.
