Apple & Cheddar Fondue
Makes 2-4 servings
*1 small onion, halved
*1 cup + 3 tbls. apple cider
*1 tsp. lemon juice
*12 oz. Cheddar cheese, shredded
*1/2 tsp. dry mustard
*1 tbls. cornstarch
*White pepper
*Green apple, such as Granny Smith, sliced
*Red apple, such as MacIntosh, Delicious, sliced
1Rub inside of a medium saucepan with cut sides of onion. Discard. Pour in 1 cup of cider and lemon juice; cook over medium heat until bubbly. Turn heat to low and gradually stir in cheese until melted.
2In a small bowl, blend mustard and cornstarch with 3 tbls. cider. Blend into cheese, stirring until mixture is thick and creamy. Season with white pepper.
3Transfer to fondue pot and serve with apple slices.
