Roquefort-Stuffed Shrimp
Makes 2 - 4 servings
*8-12 large shrimp, shelled and deveined, tails intact
*2 tbls. Roquefort or blue cheese, softened
*2 tbls. cream cheese, softened
*1 tbls. mayonnaise
*1 tbls. chives, finely chopped
*1/2 tsp. lemon juice
*3 tbls. parsley, minced
1Add shrimp to pot of boiling water and cook until pink, about 3-4 minutes. Drain and cool.
2Cut shrimp lengthwise (do not cut all the way through), leaving tails intact.
3Blend softened cheeses, mayonnaise, chives and lemon juice together. Stuff shrimp with cheese mixture. Roll rounded backs of shrimp in parsley. Chill until ready to serve.
