
Sundried Tomato, Black Olive and Garlic Compote
Ingredients
* | 1 cup olive oil |
* | 6 cloves garlic, peeled |
* | 1/2 cup black Kalamata olives |
* | 1/2 cup sundried tomatoes, soaked in water until soft and drained |
* | 1 tbls. shallots, peeled and minced |
* | 2 tbls. fresh mint, chopped |
* | 1/2 cup balsamic vinegar |
* | salt and pepper |
Instructions
1 | In a heavy saucepan, bring the olive oil and garlic to a simmer. Let simmer until the garlic is very tender, about 15 minutes. Let cool. |
2 | Combine the remaining ingredients with the garlic and olive oil. Season with salt and pepper to taste. Remember, the olives add saltiness as well. |
