Sundried Tomato, Black Olive and Garlic Compote
Ingredients
*1 cup olive oil
*6 cloves garlic, peeled
*1/2 cup black Kalamata olives
*1/2 cup sundried tomatoes, soaked in water until soft and drained
*1 tbls. shallots, peeled and minced
*2 tbls. fresh mint, chopped
*1/2 cup balsamic vinegar
*salt and pepper
Instructions
1In a heavy saucepan, bring the olive oil and garlic to a simmer. Let simmer until the garlic is very tender, about 15 minutes. Let cool.
2Combine the remaining ingredients with the garlic and olive oil. Season with salt and pepper to taste. Remember, the olives add saltiness as well.
