Lemon Asparagus with Parmesan
Makes 6 servings
*1 lb. asparagus
*1/2 cup butter
*1 tsp. fresh lemon juice
*1/4 tsp. salt
*1/2 cup freshly-grated Parmesan-Reggiano cheese
1Snap or cut off tough ends of asparagus spears. Place asparagus in a steamer over boiling salted water. Steam, uncovered, until bright green and tender. Drain.
2Combine butter, lemon juice and salt together and heat in microwave until butter is melted. Pour over asparagus.
3Just before serving, sprinkle with Parmesan cheese.
