Skinny-Dipping Crudite
Makes 6 servings
Ingredients
*2 oz. Roquefort or blue cheese
*2 oz. nonfat cottage cheese
*2 tbls. plain nonfat yogurt
*1 tbls. skim milk
*2 tbls. fat-free cream cheese
*1/4 tsp. paprika
*1/2 tsp. sugar
*Freshly ground pepper, to taste
*Chopped chives for garnish
*Assorted fresh vegetables: carrots, celery, cherry tomatoes, radishes, zucchini, mushroom slices, green onions, broccoli, cauliflower
Instructions
1Combine all ingredients, except chives and vegetables, in a food processor or blender and mix well. Chill 3 - 4 hours.
2Serve with your favorite fresh vegetable arrangement.
