Black Bean Soup
Makes 4 - 6 servings
*1 lb. lean ground beef or turkey
*1 medium onion, chopped
*Salt and pepper, to taste
*2 cups frozen corn
*15-oz. can black beans, drained and rinsed
*14.5-oz can seasoned diced tomatoes, undrained
*14.5-oz. can onion-flavored beef broth
*1 tsp. ground cumin
*1 tsp. dried cilantro leaves
*3 tsps. chili powder
1Preheat oven to 325 degrees.
2Spray non-stick skillet with cooking spray. Add ground beef and onion to skillet. Season with salt and pepper. Cook over medium high heat until beef is browned and broken up and onion is translucent. Drain.
3Add beef, onion and all other ingredients to a 2 quart casserole. Stir to combine. Cover and bake for 30 minutes.
