
Salmon Mousse Hors d'oeuvres
Makes 8 servingsIngredients
* | 8-oz. can salmon, drained and picked over to remove any skin or bones |
* | 4 oz. cream cheese, softened |
* | 2 scallions, finely chopped |
* | 1 tsp. prepared horseradish |
* | 1 tsp. fresh lemon juice |
* | 2 tsp. fresh dill, chopped |
* | Salt to taste |
* | 1 English cucumber, sliced into rounds |
* | Additional fresh dill for garnish |
Instructions
1 | Combine first seven ingredients in a bowl and blend thoroughly using an electric mixer. (Alternately, blend together in a blender or food processor.) Chill 4 - 6 hours. |
2 | Spread mousse on cucumber rounds and garnish with a sprig of fresh dill. Arrange on serving platter. |
Notes
- This recipe can be multiplied.
- Assorted crackers or pumpernickel and rye bread rounds are also delicious for serving with the mousse.
