Salmon Mousse Hors d'oeuvresMakes 8 servings
|*||8-oz. can salmon, drained and picked over to remove any skin or bones|
|*||4 oz. cream cheese, softened|
|*||2 scallions, finely chopped|
|*||1 tsp. prepared horseradish|
|*||1 tsp. fresh lemon juice|
|*||2 tsp. fresh dill, chopped|
|*||Salt to taste|
|*||1 English cucumber, sliced into rounds|
|*||Additional fresh dill for garnish|
|1||Combine first seven ingredients in a bowl and blend thoroughly using an electric mixer. (Alternately, blend together in a blender or food processor.) Chill 4 - 6 hours.|
|2||Spread mousse on cucumber rounds and garnish with a sprig of fresh dill. Arrange on serving platter.|
- This recipe can be multiplied.
- Assorted crackers or pumpernickel and rye bread rounds are also delicious for serving with the mousse.
