Salmon Mousse Hors d'oeuvres
Makes 8 servings
*8-oz. can salmon, drained and picked over to remove any skin or bones
*4 oz. cream cheese, softened
*2 scallions, finely chopped
*1 tsp. prepared horseradish
*1 tsp. fresh lemon juice
*2 tsp. fresh dill, chopped
*Salt to taste
*1 English cucumber, sliced into rounds
*Additional fresh dill for garnish
1Combine first seven ingredients in a bowl and blend thoroughly using an electric mixer. (Alternately, blend together in a blender or food processor.) Chill 4 - 6 hours.
2Spread mousse on cucumber rounds and garnish with a sprig of fresh dill. Arrange on serving platter.
  • This recipe can be multiplied.
  • Assorted crackers or pumpernickel and rye bread rounds are also delicious for serving with the mousse.
