Roasted Garlic and Potato Soup
Makes 6 servings
*4 scallions
*5 garlic cloves, roasted (Roasted Garlic)
*3 tbls. butter
*1 large yellow onion, diced
*1/4 cup flour
*3 large potatoes, peeled and boiled until tender
*2 cups chicken stock
*2 cups half and half
*1/2 cup freshly-grated Parmesan-Reggiano cheese
*Salt and pepper, to taste
1Cut 2-inch section from each scallion. Shred and place scallions in ice water, allowing them to curl.
2Squeeze roasted garlic from cloves and mash.
3Melt butter in large dutch oven. Add mashed garlic and diced onion; saute for 5-7 minutes. Stir in flour and mix well.
4Add remaining ingredients and simmer for 20 - 30 minutes, stirring occasionally. Do not allow to boil.
5Working in batches, puree mixture in blender and return to clean saucepan. Reheat when ready to serve. Do not allow to boil. Reseason if necessary. Serve with garnish of shredded scallion curls.
