
Greek Fava Spread
Makes 12 ServingsIngredients
* | 1/2 cup extra virgin olive oil |
* | 2 large white onions, coarsely chopped |
* | 3 1/2 cups split yellow peas |
* | Salt and pepper to taste |
Instructions
1 | Prepare a large stock pot with 2 1/2 quarts of water. |
2 | Add all ingredients and cook over low heat for 1 hour or more until mixture begins to stick to the bottom of the pot. |
3 | Puree mixture in food processor. Taste and adjust seasonings if desired. Refrigerate overnight. |
4 | Serve chilled with onions, capers, extra virgin olive oil, chopped parsley and grilled pita bread. |
