Greek Fava Spread
Makes 12 Servings
*1/2 cup extra virgin olive oil
*2 large white onions, coarsely chopped
*3 1/2 cups split yellow peas
*Salt and pepper to taste
1Prepare a large stock pot with 2 1/2 quarts of water.
2Add all ingredients and cook over low heat for 1 hour or more until mixture begins to stick to the bottom of the pot.
3Puree mixture in food processor. Taste and adjust seasonings if desired. Refrigerate overnight.
4Serve chilled with onions, capers, extra virgin olive oil, chopped parsley and grilled pita bread.
