Parmesan Pasta Shells
Makes 6 servings
*1 tsp. garlic salt
*1 lb. orrechetti, small pasta shells or ditalini
*1 tbls. olive oil
*4 tbls. butter
*1 cup freshly grated Parmigiano-Reggiano cheese
*1 cup shredded mozzarella cheese
*1/2 cup chicken stock, warmed
*4 tbls. fresh chives, chopped
*Salt and pepper, to taste
1Bring a large pot of water seasoned with garlic salt to a boil. Add pasta and cook according to package directions until tender.
2Drain pasta thoroughly and place in warmed serving bowl. Add olive oil, butter, cheeses, chicken stock, chives, salt and pepper, and toss to combine. Serve immediately.
