Tabbouleh Salad
Makes 8 Servings
*1/2 cup bulgur wheat
*1 cup hot water
*1/2 bunch chopped fresh parsley
*1/4 cup chopped fresh peppermint
*1 cup diced tomato
*1/4 cup diced scallions
*1/4 cup chopped red onion
*3 tablespoons peeled, chopped cucumber
*2 tablespoons olive oil
*3 tablespoons fresh lemon juice
*1/2 teaspoon salt
*1/2 teaspoon black pepper
1Place bulgur wheat in a small bowl, add hot water, cover and let soak for 20 minutes.
2Combine bulgur with remaining ingredients and mix well.
  • EACH 1/3 CUP SERVING CONTAINS APPROXIMATELY: 75 calories, 8 gm. carbohydrate, 4 gm. fat, 0 mg. cholesterol, 2 gm. protein, 126 mg. sodium, 2 gm. fiber
  • Tabbouleh is a popular Middle Eastern dish, often served cold and accompanied by crisp bread such as lavosh or pita. The fresh vegetables, mint and lemon juice make it an uniquely refreshing salad.
