Makes 8 Servings
*1 cup sour cream
*2 tablespoons Confectioners' sugar
*1 teaspoon McCormick Imitation Coconut Extract
*2 8-ounce cans pineapple chunks, drained
*11-ounce can mandarin orange segments, drained
*1 cup miniature marshmallows
*1 medium banana, sliced
*Toasted chopped pecans (optional)
1Mix sour cream, Confectioners' sugar and extract; set aside.
2Mix pineapple chunks and orange segments in medium bowl. Stir in sour cream mixture. Cover. Refrigerate 1 hour or until ready to serve.
3Add marshmallows and bananas just before serving; mix lightly. Garnish with toasted chopped pecans, if desired.
  • Substitute 1 fresh pineapple, cut into chunks, for the canned pineapple.
  • Prep Time: 15 Minutes
  • Refrigerate: 1 Hour
