Vegan Oatmeal Cookies
Makes 36 Cookies
*1 box firm silken organic tofu, about 10 1/2 ounces, drained
*1/2 cup sugar
*1/2 cup brown sugar
*1/3 cup canola oil
*1 tablespoon pure vanilla extract
*1/4 teaspoon pure almond extract
*1 1/2 cups rolled oats
*1 cup all-purpose flour
*1/2 teaspoon salt
*1 1/2 teaspoons ground cinnamon
*1 teaspoon baking powder
*1/2 cup raisins
1Preheat oven to 375F degrees. Lightly coat a baking sheet with canola oil.
2Puree tofu in a blender container. Transfer to a mixing bowl and add sugars and oil. Add extracts and mix well. Add oatmeal and stir to combine.
3Combine flour, salt, ground cinnamon and baking powder in a medium bowl and mix well. Add dry ingredients to tofu mixture in thirds, mixing after each addition until all ingredients are moistened. Add raisins last.
4Roll about 2 tablespoons (1 ounce) dough into a ball and set on prepared baking sheet. Repeat for remaining dough. Wet hands and lightly flatten cookies before baking. Bake for 10 to 12 minutes or until just golden.
