Basil Whipped Potatoes
Makes 4 Servings
*6 Idaho potatoes, peeled and cut into large chunks
*1 cup heavy cream
*4 ounces unsalted butter
*Salt and pepper to taste
*2 ounces basil-infused olive oil
*1 tablespoon chives, chopped
1In a large saucepan, place potatoes and cover with water and a good pinch of salt. Bring to a boil and simmer until fork tender.
2Bring cream and butter up to a boil.
3Drain potatoes and place into a mixer with a whip attachment.
4Whip potatoes and slowly add the cream and butter.
5Adjust seasoning with salt and pepper.
6Top with basil oil and chopped chives as garnish.
