Dijon and Sage Encrusted Turkey Tenderloin
Makes 4 Servings
*1/2 cup seasoned bread crumbs, dry
*3 tablespoons fresh sage, chopped
*4 tablespoons Dijon mustard
*1 package Shady Brook Farms or Honeysuckle White Turkey Breast Tenderloins
*1/8 teaspoon salt
*1/8 teaspoon coarse ground black pepper
*2 tablespoons butter, melted
1Preheat oven to 375F degrees.
2Mix bread crumbs with chopped sage and set aside.
3Spread mustard on both sides of each tenderloin. Press bread crumb mixture onto both sides of tenderloin. Place tenderloin on lightly oiled baking sheet.
4Season with salt and pepper. Drizzle with melted butter and bake for 25 to 30 minutes, or until cooked thoroughly and tenderloins have reached an internal temperature of 170F degrees.
