Mexican Fiesta Dip
Makes 6 Servings
*16-ounce can refried beans
*3 avocados, chopped
*2 teaspoons lemon juice
*Salt and pepper to taste
*1 pint sour cream
*1 3/4 cups (7 ounces) Sargento Bistro Blends Shredded Chipotle Cheddar Cheese, divided
*1 bunch green onions, chopped
*2 tomatoes, seeded and chopped
*2 1/4-ounce can sliced black olives, drained
*Tortilla chips
1Spread refried beans on a large platter.
2Combine avocados, lemon juice, salt and pepper and spoon mixture on top of beans.
3Combine sour cream and 1 cup cheese. Spread on top of avocado mixture.
4Combine green onions, tomatoes and olives. Spread mixture in a ring around outside edge of platter. Garnish top with remaining cheese and serve with tortilla chips.
