Greens with Balsamic Vinaigrette & Blue Cheese
Makes 8 servings
*1 head romaine lettuce
*2 heads Boston or butter lettuce
*1 large cucumber, peeled
*3 Roma (plum) tomatoes
*1/4 cup Balsamic vinegar
*3 tbls. water
*1 packet Italian salad dressing mix
*3/4 cup olive oil
*8 oz. crumbled blue cheese
1Wash lettuces and pat dry. Tear into bite-sized pieces and mix together.
2Slice cucumber into 1 inch slices and quarter. Cut tomatoes in half and remove seeds. Dice tomatoes.
3Combine vinegar and water in air-tight container. Add contents of dressing mix packet and shake until well blended. Add olive oil and shake again until completely blended. (Dressing can be made several hours ahead).
4Arrange lettuces among salad plates or bowls. Top with cucumber and tomato. Drizzle Balsamic vinaigrette over top and sprinkle with blue cheese.
