
Greens with Balsamic Vinaigrette & Blue Cheese
Makes 8 servingsIngredients
* | 1 head romaine lettuce |
* | 2 heads Boston or butter lettuce |
* | 1 large cucumber, peeled |
* | 3 Roma (plum) tomatoes |
* | 1/4 cup Balsamic vinegar |
* | 3 tbls. water |
* | 1 packet Italian salad dressing mix |
* | 3/4 cup olive oil |
* | 8 oz. crumbled blue cheese |
Instructions
1 | Wash lettuces and pat dry. Tear into bite-sized pieces and mix together. |
2 | Slice cucumber into 1 inch slices and quarter. Cut tomatoes in half and remove seeds. Dice tomatoes. |
3 | Combine vinegar and water in air-tight container. Add contents of dressing mix packet and shake until well blended. Add olive oil and shake again until completely blended. (Dressing can be made several hours ahead). |
4 | Arrange lettuces among salad plates or bowls. Top with cucumber and tomato. Drizzle Balsamic vinaigrette over top and sprinkle with blue cheese. |
