Turkey Cassoulet
Makes 4 Servings
Ingredients
*8 ounces Shady Brook Farms or Honeysuckle White Turkey Breast Tenderloins, diced
*1 medium yellow onion, sliced thin
*2 tablespoons rendered bacon fat
*1/4 cup dry white wine
*12 ounces white beans
*2 sprigs fresh thyme
*2 cloves garlic, minced
*10 ounces ripe tomatoes, peeled and seeded
*1 pinch nutmeg
*Salt and pepper to taste (optional)
*Fresh thyme leaves and parsley for garnish
Instructions
1Saute diced turkey and onions in rendered bacon fat until caramelization begins and turkey is evenly browned. Deglaze the pan with wine.
2Add beans, thyme, garlic, tomatoes, nutmeg, salt and pepper. Cook, stirring occasionally, until well thickened. Remove thyme sprigs.
3Garnish individual servings with fresh thyme leaves and parsley.
