Caribbean Glazed Grilled Turkey
Makes 4 Servings
*1/4 cup honey
*8-ounce can pineapple slices, drained, juice reserved
*1 tablespoon margarine, melted
*1/2 teaspoon Jamaican jerk seasoning
*1 package Shady Brook Farms or Honeysuckle White Turkey Breast Cutlets
*Salt and black pepper to taste
1Preheat charcoal or gas grill.
2To prepare the glaze, combine honey, 2 tablespoons reserved pineapple juice, margarine and jerk seasoning in a small bowl.
3In a large container, pour remaining juice over turkey. Let stand for 15 minutes.
4Cook for 5 minutes on each side or until no longer pink and internal temperature reaches 170F degrees. Brush occasionally with honey and jerk seasoning glaze.
5Place pineapple slices on turkey. Sprinkle with salt and black pepper to taste.
