20 Clove Turkey
Makes 4 Servings
*1 package Shady Brook Farms or Honeysuckle White Turkey Breast Tenderloins
*20 cloves garlic, peeled (about 2 bulbs)
*2 tablespoons olive oil
*2 tablespoons Cognac
*1/2 cup dry white wine or chicken broth
*1 teaspoon dried rosemary
*1 teaspoon dried tarragon
*1/2 teaspoon salt
*1/2 teaspoon coarse ground black pepper
*French bread for serving
1Preheat oven to 375F degrees.
2Place tenderloins and garlic in a 9"x13" baking dish. Drizzle with olive oil. Add Cognac and wine or chicken broth. Sprinkle with herbs, salt and pepper.
3Cover baking dish with lid or cover tightly with aluminum foil. Bake for approximately 1 hour or until tenderloins have reached an internal temperature of 170F degrees.
4Serve with warm French bread. Spread the roasted garlic on the bread like butter.
