Grilled Pork Tenderloin with Watermelon, Preserved Lemon and Red Onion Salad
Makes 4 Servings
*4 pork tenderloins
*1/2 tsp. 5-spice powder (available at Asian markets and some supermarkets)
*6 star anise
*1/4 cup soy sauce
*1/4 cup medium dry sherry
*1 tsp. chopped ginger
*1/2 tsp. chopped garlic
*1/2 tsp. coriander seed
*4 tbls. sesame oil
*1/4 tsp. cracked black pepper
*1/2 cup orange juice
*1/4 cup olive oil
*cooking oil
*salt and pepper
*Watermelon, Preserved Lemon and Red Onion Salad
1To make the marinade for the pork, mix together in a small bowl the 5-spice powder, star anise, soy sauce, sherry, ginger, garlic, coriander, sesame oil, pepper, orange juice, salt and pepper and olive oil.
2Place the tenderloins in a shallow dish and pour the marinade over them. Let marinate 45 minutes.
3Brush tenderloins with cooking oil and season with salt and pepper. Grill the tenderloins until medium. Allow to rest before slicing.
